Get ready for a SUPER easy plant-based recipe that will blow you away and act as an amazing meat substitute!! Most of you are probably thinking “what in the world is jackfruit and why would you put it in a savory dish??”
After it’s cooked, jackfruit gives the texture and similar taste of carnitas, making it a very delicious plant-based option for a lot of meals! You can season the jackfruit a ton of different ways, but the seasoning I’m going to give the recipe for makes the jackfruit taste great in tacos or a savory bowl. I’m also going to share how I get it to have a very crispy texture that I LOVE!
This recipe will make enough jackfruit for two smaller meals or one big meal if you tend to snack on a few pieces of the jackfruit during the cooking process like I do..oops!
What you need to make it:
- 1 can of Trader Joe’s canned green jackfruit
- Olive or avocado oil
- Cumin
- Garlic Powder
- Paprika
- Himalayan pink salt
- Pepper
How to make it:
1.Start by opening the can of jackfruit and draining the liquid out (you will just need the jackfruit 🙂 ) Put all of the chunks of jackfruit into a skillet on medium heat.
2. Add a couple teaspoons of your choice of oil and all of the spices to your liking and toss the jackfruit around in it. I usually just eyeball the oil and spices that I put in. Keep it on medium heat for about 6-8 minutes while continuing toss the jackfruit around the pan.
3. When the jackfruit seems to be getting softer, take two forks and slightly shred it into smaller chunks, without completely shredding it yet. You will notice it start to take on the appearance of pulled pork. Keep it in the pan for just a few more minutes to soften it even more. You can add more oil or spices if needed!
4. Once soft, take pan off heat. Set the oven on 400 degrees and line a baking sheet with parchment paper.
5. Place the jackfruit onto the baking sheet and shred as much as possible with two forks. Try to spread out the jackfruit evenly on the sheet so that it all has a chance to crisp up.
6. Place the baking sheet into the oven and cook for about 5-10 minutes or until slightly crispy!!
I hope you enjoy this recipe as much as I do!!!
